The SFT2020 uses a Pt100 probe which is accurate and repeatable. However, Pt100 sensors, because of their construction, are generally slower than the less accurate thermocouples which are used in lower quality food probes. Yet the SFT2020 produces an accurate reading within 5 seconds. This is 4 – 6 times faster than most sensors which take 20 – 30 seconds to settle on the final temperature. How did we make this technological leap forward??
The answer is that the SFT2020 uses an advanced algorithm developed in-house. The instrument makes several measurements within the first 5 seconds and puts those results into the formula contained in the SFT2020’s firmware. The result of the formula is then combined with a second algorithm. The result is the actual product temperature to an accuracy of +/0.5 oC within 5 seconds.
Simple concept but it took some clever mathematics to achieve the result and a lot of in-house testing to confirm it. This is just one of the many reasons why the SFT2020 is making Food Safety HACCP records so much easier to generate and maintain.
